A cleaner French press

French press makes a rich, full-bodied cup. These steps keep it clean.
- Use 30 g of coarse ground coffee to 500 g of water just off the boil (about 95 °C).
- Pour all the water, then wait 4 minutes.
- Gently break the crust with a spoon and scoop off the foam and floating grounds.
- Wait another 5 minutes. The fines settle to the bottom.
- Press only until the plunger sits on the surface, then pour slowly.
Try it with Guatemala Huehuetenango or the Estate Espresso Blend.
